If videos look fine on your iPhone but strange elsewhere, HDR is the usual reason.

Short answeriPhones record HDR (Dolby Vision) video by default on recent models. Some apps and screens don’t handle HDR well. You can turn HDR Video off in Settings › Camera › Record Video.
